WHEN THE TIME COMES
When summer gives way to autumn, towards the end of September we look at our olives and we decide if it is time to harvest. The varieties of olive trees, particular of the Veneto region are named: Favarol, Grignano, Frantoio, Casaliva and Leccino
PICKED BY HAND
We start early in the morning, laying nets on the autumn dew grass. The nets are gently posed around the trees to avoid losing those little green pearls.
During the harvest we use manual and electric tools and a good amount of patience.
It is a unique moment, a moment of sharing between us and nature: for a long time the plants have worked calmly for us. It is time to give back.
The annual production is small as we use exclusively our olives to make the final product: a certified organico EVO.
THE MILLING: COLD EXTRACTION
Our philosophy is to mill the olives right after the harvest. Within 24 hours, the olives are taken to the oil mill to be processed.
We have selected professionals who use a continuous cycle system, who follow our organic way of thinking and guarantee an excellent quality of the mill process.
The oil extraction is a cold pressing process, at controlled temperature (max 26 degrees). In this way the organoleptic properties are preserved as well as the nutritional values.
THE FINAL TASTING
Our first satisfaction as a family lies after the hard work, when we taste the olive oil, our product, at home, all together.
Then, a sample is given to olive oil tasters, who will review the product, defining the characteristics:, flavours, the consistency of the taste as well as a chemical analysis.
As a small production, each year the olive oil can surprise with subtle nuances. The olive oil is full-bodied, with fruity nuances, bitter and spicy.
